2 September Birthdays An interview with Michelle D. Q: How old are you going to be this year? A: I will be turning 40. Q: What was your favorite Birthday present you've received? A: I really don't think I had one that stood out above the rest. Q: What is your favorite Birthday Meal? A: I love anything lobster, crab, shrimp, etc. Q: What was your favorite Birthday Treat? A: I like most anything. Q: what was your favorite Birthday Memory? A: My 21st Birthday. Enough said =) A group of staff and clients took the long drive out to Mystic Connecticut to visit the Mystic Aquarium. Along with checking out the fish, penguins, beluga whales, and other sea life, several clients got the chance to pet the rays in the touch tank. Slow Cooker Cilantro Lime Chicken Ingredients: 1 (16 ounce) jar salsa 1 (1.25 ounce) package dry taco seasoning mix 3 tablespoons chopped fresh cilantro 3 pounds skinless, boneless chicken breast halves 1 lime, juiced Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve. There are even simple slow cooker desserts! Check out the websites below for more great recipes. This week, we re focused on Fried Foods. They are full of calories and fat and should be avoided as much as possible. So, our suggestion is to get a crock pot and follow these simple recipes for some amazing food! Easy Beef Stew 1 ½ cups fresh baby carrots 2 medium potatoes, peeled, cut into 1-inch pieces 1 medium stalk celery, cut into 1-inch pieces 1 (1.5-oz.) pkg. beef stew seasoning 1 lb. beef stew meat 1 cup water 1 cup Green Giant Niblets Frozen Corn 1 cup Green Giant Frozen Cut Green Beans In 3 1/2 to 4-quart slow cooker, layer carrots, potatoes and celery. Place stew seasoning on waxed paper or in plastic bag. Add beef; coat with seasoning. Add beef to slow cooker; sprinkle with any remaining seasoning. Add water. Layer frozen corn and green beans on top. 2 Cover; cook on low setting for 8 to 10 hours. Stir stew before serving.

3 PETERSS VALLEY DAY We had some amazing artists from Peters Valley show off their talents at PHPI. Fran showed everyone how to weave on a loom, Kristal demonstrated how she makes metal jewelry, and Bonnie let everyone get their hands dirty on a potter s wheel. It was an awesome experience. Thank you to Lindsay, Peters Valley, and the artists!

4 Q: What inspired you to become a Speech Pathologist? Bonna: Well, my sister is an Occupational Therapist. So I learned a little bit about OT. But, I wanted to learn something more concentrated. OT and PT are broad and I m not so good at math. So, I don t know how would have done with that. I took a few general communication classes and I realized I really liked it. So, I decided to dedicate 6 years of college to becoming a Speech Pathologist. Q: Why did you decide to stay here after your internship? Bonna: I did my first placement of internship at a school, which I loved. I liked working with the kids. However, when I came here for my internship, I felt like I was making a bigger impact on everyone s lives. Working in a school is more concentrated on the process of producing sounds and words. Here we are more focused on communicating. People communicate all the time without even realizing it. In this adult setting, especially with brain injury, you get the most rewards from the work. Bonna Mai new Speech Pathologist at PHPI Q: Where did you go to school and tell us a little about your time there? Bonna: I went to school, 4 years undergraduate and 2 years graduate school, at East Stroudsburg University. In between undergraduate and graduate programs you weren t automatically accepted into the graduate program. You had to apply for it. That was obviously my first choice - It s close to home, I knew everyone, I knew my professors. Thankfully, I got into the graduate program. The program has changed a lot in the past 5 or 6 years. It s pretty much a brand new department with new professors. So, it s very challenging, but you learn a lot from it. I really enjoyed my time there. Q: Where did you grow up or where are you from? Bonna: I m a local gal. I was raised in Milrift, PA. That s literally 20 minutes from here. So, I know the area well - all around Milford, Matamoras. So, I m from around this area and now I live in Matamoras with my husband. Interview with Bonna continued Q: Did you know anything about PHPI before your internship? Bonna: Well, I m friends with Becky, who used to work here as a Speech Pathologist, and I actually did a couple undergraduate observations here. So, I became familiar with Progressive Health. But, before that I knew nothing about it. I didn t even realize it was here. The shuttle is destroyed, leaving Stone and Kowalsky completely alone Q: What do you like to do in your spare time? Bonna: Anything outside. I love to play sports. I grew up playing softball and basketball. I like camping and hiking. Every summer I go up to Maine and climb Mt. Katahdin. So, I m very geared to anything outside. I like being active.
