Food will be shepherd s pie and baked items for dessert. We will be voting on the updated bylaws ( ed and mailed on May 5 th ). Selina has another quiz for us! Birthdays in June: Bill (93), Alex (72), Gabby (17!), Katharina, Stephanie, Christine, Beatrice, Karen. Anniversaries in June: Roy and Eileen (61 years) Member news: Rachel is back in England for a few months to help her Mum with postsurgery needs, Lory s BOLT is working again!, Meegan is returning to Wisconsin for the summer, Ernie/Gillian have moved to Oklahoma to be closer to family, Craig s elbow healing well. Selina was on TV about the royal wedding and in the U-T newspaper about wedding celebrations did a great job. Cottage Committee Update: Harry/Meghan wedding exhibit very popular! We will extend through June. Author s exhibit being worked on by Dennis, Dottie, Ariele and Fran ready for July. Hosting at the cottage: Please contact Fran if you can host any Saturday or Sunday. Hosts do 5 hours between 11 and 5 or can elect to do a 2 ½ hour shift. It is a lot of fun. Please sign up! Please see dates available on page 2. Ethnic Food Fair Report: DONE! Thank you to all members who brought in goodies and/or helped serve at the cottage. Very successful. St George s Day at St Paul s Cathedral report: House of England was well represented. Also Evacuees group and Isle of Man. The parade, service and high tea were all great. House of England Bylaws and standing rule: HPR Bylaws committee has requested that we review and revise these. We will be voting on the bylaws updates at the June meeting. Standing rules will be addressed next month, as these do not need to be approved by HPR. July meeting: Please note that the House of England meeting for July will be on the 10 th instead of the 3 rd, because of some big todo on July 4 th!!! Congratulations to the firm for the OUTSTANDING royal wedding of Harry and Meghan, and to Meghan s Mum for bringing Los Angeles weather for the day! It was AMAZING. Page 1 of 10

House of England Lapel Pins: These are on display at the cottage. If a visitor donates to obtain one, please let Mel know when turning in the donations money. (Pins are $4 each). Interested in joining House of England? Print a membership application from the website ( or get one at the cottage on a Saturday or Sunday afternoon and mail, with check for $15 made out to the House of England, to: House of England, c/o Mel Weekley, th St #61, San Diego, CA Aesculus hippocastanum is a species of flowering plant in the soapberry and lychee family Sapindaceae. It is a large deciduous, synoecious (hermaphroditic-flowered) tree, commonly known as horse-chestnut or conker tree. The common name "horse-chestnut" is reported as having originated from the erroneous belief that the tree was a kind of chestnut (though in fact only distantly related), together with the observation that the fruit could help panting horses. The trees grow all over the countryside of England and look wonderful. There are red ones too! Page 2 of 10

House of England members are automatically members of HPR-come and observe how HPR is run by the delegates! NEXT LADIES AUXILIARY LUNCHEON: Wednesday June 13, 2018, noon, at the Hall of Nations. Hosted by House of Austria. Men invited also. Only $5 for a lovely luncheon and cultural information shared. HPR QUEENS UPDATE: Queens opened the Ethnic Food Fair entertainment on the lawn stage with dances performed. One more meeting-june 10 th. New Queens board to be elected by the girls. Then no Queens activities until the fall. HPR NEWS: (From May meeting.) Hosting Hours: Cottages have to be open Saturdays and Sundays for 5 hours between 11am and 5pm. New cottages: No update-bids being made to get construction started. Applying for grants to cover costs Lawn Programs and Hall of Nations hosting schedules-distributed at last. Amended Bylaws and Standing Rules still to be distributed. Bylaws committee now reviewing House bylaws and requesting updates/revisions. Fran s book: Printed and being sold by HPR. $42 each. Good reviews. Ethnic Food Fair: Delegates voted for modified version for this year. Houses with cottages will serve from their cottages. Houses without cottages will serve on the HPR lawn area. This will eliminate the police/traffic control/trash expenses. Reminder from HPR President: We are a non-profit organization with a permit from the City. For both these reasons all members must refrain from any political comment and/or conversation while serving in the cottages. Lawsuit: basically in limbo per Heather, HPR President. HPR Appeal for volunteers with computer skills-for updating the websites, publicity, etc. Hall of Nations closing procedure: Must be filled in after any use of the Hall- hosting or renting. Failure to do so will mean fines imposed. Trash after hosting: We must not put trash in the concrete containers-take to the dumpsters behind the House of Sweden. Hall of Nations hosting for June: 2=Lebanon, 9/10= Mexico, 16/17=Peru, 23/24=Austria, 30=Chamorros. Lawn Programs for June: Saturday June 2: House of Denmark Sunday June 3: House of England (Susuki concert) Sunday June 10: House of Philippines Sunday June 17: House of Israel Sunday June 24: house of Sweden Tuesday June 26: House of England and some of the other cottages open noon to 2pm for school children and other visitors. House of Lebanon will be in the Hall of Nations. Sad event. The City cut down the oak tree on the lawn that was the main shade for the stage events. The sound man will need to use a canopy during the summer and the audience will want to have one too. Page 3 of 10

5 Leading up to the Royal wedding! Emma Bunting came up with great decorations. Dennis had a great display set up. Day of the wedding: Dennis had photos to display and video of the ceremony on the TV screen. Elaine baked an amazing elderflour and lemons cake and Claire made darling fascinator hats that hosts wore. What a wonderful day! Page 5 of 10

7 Queen Elizabeth Cake. Dennis baked this excellent cake for our Ethnic Food Fair. It may seem like you are not making enough icing, but you are. You can either leave this cake in the pan or turn it out onto a platter before you ice it the parchment-tab strategy makes this easy. The platter approach allows the coconut to catch not just the top but the sides as well. Makes one 9 x 12 inch cake 1 cup chopped dates 1 teaspoon baking soda 1 cup boiling water 1 cup sugar 1/2 cup butter, softened 1 egg 1 teaspoon vanilla 1-1/2 cup flour 1 teaspoon baking powder 1/3 teaspoon salt 1/2 cup chopped pecans or walnuts Preheat oven to 350 F. Butter and flour a 9 x 12 inch pan, or line the pan with parchment paper. Combine dates and baking soda, and pour boiling water over them. Let mixture stand. In a large bowl, cream butter and sugar. Add egg and vanilla, and beat well. Add flour, baking powder and salt; pour in date mixture and nuts, and mix all together well. Pour batter into the pan. Transfer pan to the preheated oven and bake for 25 to 30 minutes, until golden brown on top. Remove from oven and let stand. Mix all icing ingredients except for coconut in a small saucepan. Bring mixture to a boil; boil three minutes, until thickened. Pour icing over cake and spread. Sprinkle shredded coconut on top. Potato Chip Cookies. Beryl s specialty Ingredients 1 lb butter, softened 1 cup sugar 2 tsps vanilla extract 3 cups flour 1-1 1/2 cups crushed potato chips ( I used the store brand that are similar to Lays) Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. ( The parchment paper is not necessary. I just like to use it) Cream the butter, sugar, and vanilla until light and fluffy. Gradually add the flour a little at a time, followed by the pecans and the potato chips. Mix well. Drop by teaspoonfuls onto the parchment -lined baking sheet. Bake for minutes or until lightly browned. To crush potato chips- Put them in a ziploc bag, let the air out, and use a rolling pin to crush. The cookies will be fragile right out of the oven, so be careful! The cookies will not spread when baking. If you spoon the cookies onto your baking sheet in a ball, they will stay in a ball shape and will be a little soft in the center. If you flatten the cookies before baking, they will be crispy throughout. Either way, the cook time is the same and they're both delicious! It's just a matter of preference. Page 7 of 10

9 England highlights in June: June 9: The Trooping of the Colour has marked the official birthday of the British Sovereign for over 260 years. Over 1400 parading soldiers, 200 horses and 400 musicians come together each June in a great display of military precision, horsemanship and fanfare to mark The Queen's official birthday. The streets are lined with crowds waving flags as the parade moves from Buckingham Palace and down The Mall to Horse Guard's Parade, alongside Members of the Royal Family on horseback and in carriages. The display closes with an RAF fly-past, watched by Members of the Royal Family from Buckingham Palace balcony. June 19-23: Royal Ascot Ascot Racecourse is in Ascot, Berkshire, England, which is used for thoroughbred horse racing. It is one of the leading racecourses in the United Kingdom, hosting 13 of Britain's 36 annual Group 1 horse races. The course, owned by Ascot Racecourse Ltd, enjoys close associations with the British Royal Family, being approximately six miles from Windsor Castle. The Royal Meeting held each June, remains a major draw, its highlight being The Gold Cup. Page 9 of 10
