2 From the GM General Manager, Brian Bartolec Brian Bartolec It pleases me very much to report that the golf course at Pelican Marsh Golf Club, has again been designated a Certified Audubon Cooperative Sanctuary. Dan Brooks, our Assistant Superintendant coordinated the recertification process. To reach certification, a course must demonstrate they are maintaining a high degree of environmental quality in a number of areas including: environmental planning, Wildlife & Habitat Management, Outreach and Education, Chemical Use Reduction and Water Conservation and Water Quality Management. Recertification is required every two years. In January we were visited by an environmental expert, who reported to Audubon, a concerted effort to preserve wildlife and natural areas is evident throughout the course, he was impressed with the littoral shelf plantings along some of our water properties that provide a habitat for a wide variety of birds, fish, and amphibians. They were very impressed with the upgrades to our irrigation system that resulted in a 50 percent reduction in water use. Audubon International announced that we provided voluntary actions to protect and sustain the land, water, and natural resources, and commended us for our efforts. We re one of 98 golf courses in Florida and 797 throughout the world to receive the honor. So, let s give Brook Maxwell, Dan Brooks, and their team, congratulations to a job well done Annual Meeting Results As a result of the election for the three open positions on the Board of Governors, I would like to officially welcome Tom Casey, George Cullen and George Grazier. These members will begin their three year term effective immediately. Following the annual meeting, the Board of Governors announced this year s officers of the Club. 4 From the Greens Director of Golf Course Operations, Brook Maxwell Pelican Marsh Golf Club plans to rebuild our Practice Facility this summer! Every situation that presents itself has the opportunity to be positive. After a couple months of the coldest weather in Florida in seventy years, things did not seem too positive. On the positive side, the cold weather did show us that our current practice tee is not adequate to handle our members demand for practice. The cold temperatures caused soil temperatures to Brook Maxwell fall below ideal growing conditions. Therefore, the grass did not grow at a normal rate, thus, most of this season we have not had healthy, green grass to practice on. As a result, the Green Committee met to discuss what our options were available for future improvement. Fortunately, I am proud to announce we will be rebuilding our practice facility over the summer. The project starts Monday June 21st, 2010 and the facilty should be reopened to the membership Wednesday July 21, (Weather pending) The results of this redo should have a tremendous effect on our membership. The positives of the redo are as follows: 1. Double the size of our current hitting area. 2. We will have a laser leveled hitting area. Sorry, no more uphill and side hill lies to practice from. 3. Improved drainage. 4. New Celebration Bermuda surface to hit off. 5. Single head irrigation coverage for consistent watering practices. 6. Increased durability and dense surfaces. 7. Rebuild back practice tee for potential private lessons and individual fitting. 8. Relocate target greens to be more visual. I hope that everybody has enjoyed the conditions of the course this season, and please be assured that they will only continue to improve!!! Member-Member Event HOLES IN ONE Don Rauch 1/8/2010 Hole #4 Green Tees with a 4 Rescue. William Wise 1/14/2010 Hole # yards with an 8 iron, his second hole in one. The month s final golf event will be a Couples Guest Day to be played on Sunday, April 25th, a 1:30 p.m. shotgun start to signal tee-itup time. The format will be two better- balls-of-four on the front nine, one-better-ball-of-four on the back nine. There ll be on-course games as well, making this an enjoyable way to wind up the season s golf schedule. What s more, there ll be dinner and prizes that evening. More details will be coming soon! 6 From the Chef Executive Chef, Marv Messenger With a backward glance towards a busy winter, we are beginning to see the signs of spring. As our temperatures begin to return to our summer norms (and the humidity along with it) our menus will begin to feature a lighter fare with chilled Marv Messenger soups, salads, grilled items, and fresh spring vegetables. We are looking forward to streamlining our menus for the summer, embracing the opportunity to focus on those spring and summer menu items. We will be featuring items like Refreshing Watermelon Gazpacho (one of my favorite spring and summer dishes) along with a salad of watercress, strawberries, and asparagus. Simple grilled fish or shrimp with light fruit and vegetable purees for sauces, perhaps with an accent of fresh herbs, are regular items around our house in the spring and summer and will find their way into our menu here as well. Another favorite is the Artichoke, which is in peak season in April and May. We enjoy them steamed until the leaves are tender, then dipping each leaf into melted butter. Occasionally we will prepare a simple and quick mayonnaise & herb-based cold sauce, or extra virgin olive oil with fresh herbs and garlic to use as a dip with these same artichokes. Another favorite is the baby artichoke, which we will trim and clean, then shave extremely thin on a kitchen mandolin and toss with extra virgin olive oil and lemon juice. Top that with freshly grated parmesan cheese and a bit of cracked pepper and you have a spring salad that cannot be beat! Seems to go pretty well with a nice buttery chardonnay too! On the sweet side, Florida Strawberries are in prime season during April and May as well, and a drizzle of Balsamic Vinegar tossed with fresh berries and a bit of brown sugar makes and excellent dessert. Try it baked over some brie with toasted Almonds for a delicious experience. A simple-yet great recipe for this is as follows: Baked Brie with Strawberries Ingredients: 1 (13 to 16 oz.) Whole Brie, rind left on 3 tablespoons strawberry preserves 2 teaspoons dark balsamic vinegar 1 teaspoon brown sugar ½ cup sliced fresh strawberries 1 ½ tablespoons toasted almonds Toasted Bread and crackers Cooking instructions: Preheat Oven to 350 degrees. Pace the Brie on a baking sheet or in a shallow baking dish. Bake for about 10 minutes or until the brie is soft and warm, but not runny While the Brie is baking, heat the preserves, sugar, and balsamic vinegar in a small saucepan until thick and bubbly, then remove from heat. Remove the Brie from the oven and transfer to a serving dish. Toss the strawberries with the heated preserves and arrange on top of the Brie, then sprinkle with the toasted almonds. From the Club Manager Upcoming Events April Events Club Manager, David May What a fantastic season this is turning out to be! You ve all heard the saying, If you build it, they will come. Well, we ve built it and come you did. I m pleased to report that when compared to those of last year attendance at our events this season is up over 30 percent. As you might assume, as this season winds down planning is already David May underway for next season, and any comments you may have pertaining to something you really enjoyed and would like to have repeated, or if you have an idea for next year, please let me know and we ll see if we can make it happen. Another component of our operation that gained steam this season was in our catering and take-out services. Catered house parties, neighborhood Christmas parties at the club, church dinners and luncheons, or simply take-outs from evening dinner menus saw a truly dramatic increase. There s not much we can t do along these lines, so if you d like to plan such an affair now or in the future let s see if we can plan it together. I m looking forward especially to the possibilities for the coming season in that during the summer we ll be going through a total makeover upstairs in the clubhouse. When the paint has dried, the new chairs arrived, the venetian blinds are gone and the new retractable sunshades are in place, and all the other enhancements are complete, you ll have an even bigger reason to love being able to call Pelican Marsh My Club. In closing, to those leaving for points north, have a wonderful summer and hurry back, and to those remaining here in the area know we look forward to seeing at the club.
