2 Page 2 Rains County Post Newsletter Seasons of Taste Traveling Cooking School Fall is in the are and we are celebrating at Texas Cooperative Extension, with a traveling cooking school. County Extension Agents will demonstrate recipes and provide useful tips to carry you through fall and winter celebrations. The Seasons of Taste class will be conducted at three different locations in the month of October. The first class will be on Monday, October 8, at 10:00 a.m. at the Farm Bureau Office located at 281 E. Hwy. 243 in Canton. The second class will be held on Monday, October 15, at 10:00 a.m. at the Kinzie Community Building, 912 Mt. Sylvan Street in Lindale. The third and final class will be conducted in Sulphur Springs on Monday, October 22, at 10:00 a.m. at the Hopkins County Civic Center, 1200 West Houston Street (Highway11). Attendants will receive a booklet with the demonstrated recipes and be eligible for door prizes. Demonstrations will cover Christmas breakfast/brunch, harvest treats/food garnishing, appetizers/desserts/ Thanksgiving, slow cooking, and tailgating/super Bowl. The class will be fun and full of useful information for the upcoming holidays. 3 Page 3 Rains County Fair Celebrating 77th Anniversary! The Rains County Fair is celebrating it s 77th Anniversary this year! The Rains County Fair will be held September 10 15, 2007, at the Rains County Fairgrounds in Emory. A brief schedule of events include: gospel singing, pageant contests, Junior Livestock Awards, Show, & Auction, Classic Car Show Around the Square, carnival rides, creative arts exhibits, country & western band & dance, Agricultural Mechanics Silent Auction, farm animal dress up contest, David Hartwig & Friends of Skidboot from Quinlan, Texas, Mutton Bustin Contest, parade, 42 domino tournament, gymnastic team performance, homemade chili cook-off contest, martial arts performance, pet show, & tons of great food for everyone to enjoy! 4 Page 4 Rains County Post Newsletter David Hartwig & Friends Of Skidboot To Perform At 77th Annual Rains County Fair Make plans now to see David Hartwig & Friends of Skidboot perform at the 77th Annual Rains County Fair on Friday, September 14, at 6:00 p.m. at the Rains County Fairgrounds Arena in Emory. Although the world famous Skidboot passed away on March 25, 2007, David & Friends of Skidboot, two young dogs named Little Skidboot & Bois d Arc, and a lie-detector horse named Cheyenne are continuing the Skidboot legacy by telling about Skidboot s influence on millions of people worldwide. You will have a big smile on your face after seeing their exciting performance, as they never disappoint! Come on out & be a part of the fun! 5 Page 5 Mutton Bustin' at Rains County Fair It's going to get wild and woolly! Back by popular demand at the 77 th annual Rains County Fair is the Mutton Bustin' Contest to be held on Friday, September 14, at the Rains County Fairgrounds Arena. Mutton Bustin contestants must be in front of the livestock arena by 5:45 p.m. The Mutton Bustin Contest will begin following David Hartwig & Friends of Skidboot Show. Innocent and cute. We dare anyone to try to find a child that does not embody both of these characteristics. We are going to couple innocent and cute with brave and gritty as these youngsters will try their hand at taming wild sheep in the fantastically entertaining Mutton Bustin' Contest. Judged like the bull riding, prepare yourself for belly laughs when our contestants prove that the thrill of competition is not exclusive to the adult world. If your child is 4 to 7 years old (no weight limit) and is interested in competing in the Mutton Bustin Contest then pick up your entry application at Country Flowers in Emory or at the Rains County Leader Office on the square in Emory. Helmets are required & will be available at the contest or you may bring your own. Spaces are limited so please register early! You must pre-register & sign a waiver form in order to participate. 6 Page 6 Rains County Post Newsletter Freedom Isn t Free I watched the flag pass by one day, It fluttered in the breeze. A young Marine saluted it, And then he stood at ease. I looked at him in uniform So young, so tall, so proud. With hair cut square and eyes alert, He d stand out in any crowd. I thought how many men like him Had fallen through the years. How many died on foreign soil How many mothers tears? How many pilots planes shot down? How many died at sea How many foxholes were soldiers graves? No, freedom isn t free. I heard the sound of Taps one night, When everything was still, I listened to the bugler play And felt a sudden chill. I wondered just how many times That Taps had meant amen, When a flag had draped a coffin. Of a brother or a friend. I thought of all the children, Of the mothers and the wives, Of fathers, sons and husbands With interrupted lives. I thought about a graveyard At the bottom of the sea Of unmarked graves in Arlington. No, freedom isn t free. Enjoy Your Freedom & God Bless Our Troops! Show Your Support!

7 Page 7 The Trouble Tree The carpenter I hired to help me to restore an old farmhouse had just finished a rough first day on the job. A flat tire made him lose an hour of work, his electric saw quit, and then his old pickup truck refused to start. While I drove him home, he sat in stony silence. Once arriving, he invited me in to meet his family. As we walked towards the front door, he paused briefly at a small tree, touching the tips of the branches with both hands. When opening the door he underwent an amazing transformation. His tanned face was wreathed in smiles and he hugged his two small children and gave his wife a kiss. Afterwards, he walked me to the car. We passed the tree and my curiosity got the better of me. I asked him about what I had seen him do earlier. Oh, that s my trouble tree, he replied. I know I can t help having troubles on the job, but one thing is for sure, troubles don t belong in the house with my wife and children. So, I just hang them up on the tree every night when I come home. Then in the morning I pick them up again. The funny thing is, he smiled, when I come out in the morning to pick them up, there aren t nearly as many as I remembered hanging up the night before. 8 RECIPE CORNER Delicious Fruit Salad 1 cup vanilla low-fat yogurt 1/3 cup orange juice 1 tsp. ground cinnamon 2 medium apples, chopped 2 cups seedless green grapes, halved 1/2 cup dry roasted peanuts Beat yogurt, orange juice and cinnamon in medium bowl with wire whisk until well blended. Add remaining ingredients; mix lightly.
