1 THE LEXINGTON TIMES SEPTEMBER NEWSLETTER 2016 FROM THE GENERAL MANAGER Just because summer is winding down doesn t mean that we slow down. We ve added a few new things this fall to enhance your member experience, and hope you will join us. As the kids settle in at school and life gets back into a bit of a routine, we want your experience at the club to be anything but routine, so please think of us for any of your dining or entertainment needs. Can t figure out what to cook for dinner? Call us and place a to-go order, or just come to the Tri-Brook and let us do the cooking and cleaning! Here are just of few of the new and exciting things we re doing this fall, join Us! After Labor Day, the swimming pool will remain open. Children under the age of 18 must be supervised by an adult, as no lifeguards will be on duty. Please note that we have implemented a swim at your own risk policy. As long as the weather cooperates, you ll be able to enjoy the pool through September. The 1st Inaugural Lexington Invitational was very well received. Our goal is to remember our heritage as a club, which dates back to If you have photographs, club memorabilia or newspaper articles, please contact us at the club so we may make a copy and memorialize the history of Lexington Golf and Country Club. 1st Wednesday Wine Dinner is back! On Wednesday, October 5, Chef Bunyan will prepare a five-course dinner, with pairings for each course. This always popular event will be in the View, so be sure to make your reservations soon. Do you have a great chili recipe? Join us on Saturday, October 15 for our Fall Family Fun Day and Chili Cook-off! For the kids, we ll have face-painting, pumpkin carving and some fun games! For the adults, we ll have a chili challenge that is unlike any other. We re inviting members to prepare their chili at the club, and our members will judge their creations and vote for the best tasting chili. The winner s chili will then be featured on our winter menu in the Tri-Brook. There is no charge for participating in the chili challenge - bring the ingredients and we ll provide the burners and the pots! We ll also have new beer offerings from Devil s Backbone, so come out, bring the family and let us entertain you! Are there other events or activities you d like us to host? Please call or to let us know what you would like to see. Our staff is constantly brainstorming to come up with new and exciting opportunities for you to enjoy at the club. #LexingtonFirst #LexingtonProud Thank you, and I look forward to seeing you soon at the Club! FROM THE GOLF PROFESSIONAL With summer coming to a close and fall on its way, we are looking forward to cooler temps and lower humidity levels. It has been a hot and humid summer but we can now look forward to nice weather conditions on the horizon. We have several events coming up with the Labor Day Shamble on Monday, September 5, the LGCC Club Championship for men and women scheduled for Saturday and Sunday, September 24-25, the Junior Club Championship on Saturday, September 10, and the Couple s Classic on Sunday, September 11. Contact the golf shop for more details on these events at Also with the weather beginning to cool off it is a good time to work on improving your technique. If you re interested in improving your game let me know and we can schedule a time to get together to simplify your approach. Regards, Jeff Wagner FROM THE SUPERINTENDENT The weather pattern over the last 8 weeks took a toll on the conditions at a number of golf courses in the mid Atlantic region. I have heard some suffered significant turf loss resulting in temporary closing. We did experience some damage but overall we came through the summer in pretty good shape. As luck would have it September is the month for rejuvenation! In early September we are going to fertilize the greens to get them growing prior to aerification. We punch the greens with ½ inch holes and then topdress behind. Our goal is to have them all healed by the Club Championship. With the weather patterns and outings we occasionally fall behind in our ability to keep the rough in check. The staff works hard to try and get back on top of things and we thank you for your patience. Jeff Karlstrand A SENIOR MOMENT by Mike Evans The month since the last newsletter started well for the senior men with a solid home win over Ivy Hill (86-58), complementing the previous road win at Ivy Hill. Winning pairs for Lexington were Woody-McCoy, Grandberry-Tepper, Caskie-Jones, Hopkins-Hallock, Morris-Russell, South-Black, and Gill (playing solo). Max Caskie and Thom Gill took closest to pin honors. However, things turned around quickly with two consecutive losses. On July 28 we suffered a home loss to the strong team from Stoney Creek (52-74). The only pair to eke out a win for Lexington was Bruce-Grandberry. Closest to pin winners for LGCC were Jack Bruce (an ACE on #2), Doug Burroughs, and David Woody. Next, on August 4, came a road loss (74-88) at Lakeview. Winning pairs for Lexington were Crawford-Tepper, Jones-Shrack, Hallock-Hopkins, Siebert-South, and Grandberry- Black. Louis Grandberry and Lynn Jones won closest to the pin prizes for Lexington, while Mike Evans pocketed the drawing money. The team still has hopes for a winning season, precariously clinging to a record. Remaining are home and away matches against both Waynesboro and Boonsboro, and a home match against Lakeview. 2

4 FROM OUR KITCHEN From our table to yours. FROM THE CHEF The season we call fall was once referred to simply as harvest to reflect the time when farmers gathered their crops for winter storage, roughly between August and November. Astronomically, the season lasts from the end of the September(9/22) until December (12/21) The word harvest comes from the Old Norse word haust meaning to gather or pluck. In the early 1600 s as more people started moving into cities, the word harvest fell out of use. Instead, city dwellers began to use the phrase fall of the leaf to refer to the third season of the year when trees lose their leaves. Over time, the phrase was shortened to fall. As English spread to the New World, the common season names split as well. Today, American English uses the word fall while British English uses autumn almost exclusively. Fall provides a nice foil to its opposite season, spring, and gives us the helpful reminder, Spring ahead, fall back, when we get confused about our clocks on daylight savings. The kitchen at Lexington Golf and Country Club and it s culinary team are looking forward to unveiling an Autumn/Fall menu in September. Many of the menu items and changes are a collaborative effort between the culinary staff and the input/suggestions from our membership. It seems like today, people have more allergies than their grandparents did. Peanut allergies for instance have quadrupled in the last two decades. The reasons of why both food and seasonal allergies are increasing are being studied and discussed in both many of our institutions of higher learning as well as many practicing allergists. Here at Lexington Golf and Country Club we will endeavor to work with all allergy related requests and modify the recipes when informed (The most common food allergies are dairy, egg, wheat, soy, peanuts, tree nuts, fish and shellfish. Though, allergic reactions can be caused by virtually any food). TRI-BROOK BAR & GRILL Sunday 11a.m. - 7p.m. Kitchen closes at 6p.m. Monday Closed Tuesday 11a.m. - 6p.m. Kitchen closes at 6p.m. Wednesday - Thursday 11a.m. - 8p.m. Friday - Saturday 11a.m. - 9p.m. This is contrary to the historical record as documented by the Santa Maria Elks Club and the first-hand account of Larry Viegas, a butcher at a local Safeway store, who says that the idea to cook the meat from this area as a distinct cut of meat first occurred to his store manager, Bob Schultz, when there was an excess of hamburger in the store (into which scraps from this part of the animal were usually ground) Viegas says that that day, Schultz took a piece of the unwanted meat, seasoned it with salt, pepper, and garlic salt, and placed it on a rotisserie for 45 minutes or an hour; the result was well-received, and Schultz began quietly marketing it as tri-tip. Regardless of claims to its origin, it became a local specialty in Santa Maria in the late 1950s. Today it is seasoned with salt, pepper, fresh garlic, and other seasonings, then grilled directly over red oak wood until medium-rare. Alternative preparations include roasting whole on a rotisserie, smoking in a pit, baking in an oven, grilling, or braising in a Dutch oven after searing on a grill. After cooking, the meat is normally sliced across the grain before serving. Often labeled Santa Maria steak, the roast is most popular in the Central Coast of California, the Central Valley regions of California and throughout the entire state. It has begun to enjoy increasing favor elsewhere for its full flavor, lower fat content, and comparatively lower cost. Along with top sirloin, tri-tip is considered central to Santa Maria-style barbecue. In central California, the fat is left on the outside of the cut to enhance flavor when grilling, while butchers in many states trim the fat side for aesthetic purposes. In New York City, the Florence Meat Market has popularized the name Newport steak for a steak cut from the tri-tip. Tri-tip has also become a popular cut of meat for producing chili con carne on the competitive chili cooking circuit, supplanting ground beef because the low fat content produces little grease, for which judges take off points. Chef Bunyan A Little about our sirloin addition to the Menu,The Tri Tip. The tri-tip is a cut of beef from the bottom sirloin subprimal cut. It is a small triangular muscle. The utilization and its origins are up for debate (as many food products are). In the United States, it was typically used for ground beef or sliced into steaks until the early 1950s, when Otto Schaefer Sr. first barbecued it whole on the Schaefer Ranch. He introduced it to market in Oakland, California, and ranchers visiting the Schaefer Ranch from Santa Maria enjoyed it and took the idea home, where it was popularized by the Santa Maria Elks Club. 4
