2 Newsletter Staff: Thankfully, the abnormal winter weather has left us and we have beautiful sunny days and warmer temperatures to enjoy. Folks are outside sprucing up their yards, planting flowers and generally cleaning up. People are spending more time at the pool, walking and riding bikes. It is nice seeing everyone relishing the time spent outdoors in the warmth and sunshine. March was filled with fun celebrations and events. St. Patrick's Day Dinner was wonderful and the Spirit of Ocala Dancers were amazing. The annual Yard Sale improves every year. Always lots of items to buy, good food to eat, and friends and neighbors to visit. There is plenty to do coming up in April: Super Bingo, the Spring Carnival, and Easter Dinner, to name a few. Spring will continue to be busy with upcoming holidays to celebrate such as Mother's Day, Memorial Day, and Father's Day. If you want to help with any of these functions, contact Milda Kolesar and she will connect you with the chairperson of the event. Also, contact Milda if you would like to chair an event, such as a pot-luck dinner, or any other type of social gathering. She is happy to help get you started. For those who don't know, volunteering for Saturday Morning Social has changed. It used to be that one had to sign-up for an entire month. Now, you can sign up for one week at a time, two weeks, three weeks or the whole month. The choice is yours. The consensus is that it is much easier to volunteer for a week or two at a time rather than commit to a month at a time. We all have busy lives, places to go and things to do, so a whole month can be difficult to plan around. So far, this new change is working out wonderfully. Lots of people are signing up for Saturday Morning Social. Thanks to all those who give us their time on Saturday mornings to get the donuts, make the coffee, sell 50/50 tickets and clean up. Once again, a heartfelt thank you for all of you in the community who volunteer. Without you there would be no activities such as cards, billiards, poker, shuffle board, bocce ball, exercise classes, sewing, crafts and other interesting things to do. Without your work there would be no Saturday Morning Social, no dinners or other fun social events. Also, a big thank you goes to all of you who attend these activities and social functions. Without your interest, there would be no point in having these fun things to do. It takes each and every one of us to make Saddle Oak Club an active and fun place to live. 3 SADDLE OAK CLUB COMMUNITY MANAGER S CORNER APRIL 2014 Well there has been lots of rain, wind, cold weather and hot weather this past month. Hopefully we have more clear skies and sunny days in our future. I have been working hard at getting our equipment serviced so that when we start our projects we are ready to go. I have ordered some new equipment and we will be re-arranging the exercise room so that all the equipment is working and running as it should. I look forward to the new look. This month you will see me out with contractors trying to get proposals for projects, once these projects are approved I will let you know in the upcoming newsletters. 8 While the music, the fiddle and the dance routines of The Spirit of Ocala Irish Dancers held everyone s attention, it was these shy little cuties who captured SOC hearts. Please read the Bits and Pieces section in this issue for further details regarding all those involved in the success of this event. They truly deserve so many kudos for their fun green hair and their tireless and gracious efforts, which made everybody feel so Irish for the day.

9 A bonnie lass sang authentic Irish tunes and verse with an Irish lilt. The soda bread could not be beat! Corned beef, cabbage, carrots, potatoes, and green Jello, just for luck!!! We surely shook our shamrocks at this event. Sláinte mhaith! P R I Z E S!! LOTS OF FOLKS CAME WEARING THE GREEN!

10 IRISH SODA BREAD EXACTLY AS SERVED AT OUR ST. PATRICKS DAY EVENT 2 cups all-purpose flour 3 tbsp. granulated white sugar 1 ½ tsp. baking powder ½ tsp. baking soda ½ tsp. salt Ingredients ¼ cup salted butter 1 cup buttermilk low-fat is fine 1 large beaten egg ¾ cup currants ½ tsp. caraway seeds (optional) These are really terrific and surprisingly easy to make. Work as a dinner roll or biscuit made in small muffin tin. Yield: 12 regular or 5 large muffins Prep: 25 minutes Cook Time: 20 minutes Preheat oven to 375. Spray muffin tins with nonstick spray. In a large bowl, whisk together the items in column 1. With pastry cutter or two knives used in scissor fashion, cut in the butter until mixture resembles coarse crumbs. In a small bowl stir until blended the buttermilk and egg. Add that mixture to the dry ingredients and stir to combine. Stir in currants and caraway seeds, if used. Spoon the batter into the muffin trays. Bake minutes, longer for the larger muffins, or until the cake tester inserted in the center comes out clean. Remove tins to wire rack. Cool 5 minutes before removing muffins from tin cups. Finish cooling on a rack. These freeze very well. Try subbing raspberries or blueberries for the currants, without the caraway seeds. Try using 1 cup of white flour and 1 cup of wheat flour Yum! A food processor can also be used to mix the flour and butter. Serve warm or cool completely; store muffins in an airtight container at room temperature.

11 Various Saddle Oak residents own such beautiful motorcycles. Their retirement now affords them the time to enjoy riding them among new friends. Hi, my name is Leo Keach, and I l like to tell you about the SOC Motorcycle Riders. Come take a journey with us. On Tuesday, we meet at 8:45 and leave at 9:00. On Thursday we meet at 9:45 and leave at 10:00. We usually go to breakfast on Tuesdays and lunch on Thursdays, then ride off to wherever we all decide to go, depending on the weather. There is no club, no dues and no meetings; just men and women who like to ride and enjoy other people s company.
