Exhibits forwarded to the Secretary will be returned by the same route as forwarded. 5. All lids must be loosened on preserves and jam jars (NOT Bottled Fruits) 6. Exhibitors may enter more than one entry in each class. 7. Delivery of cookery exhibits: All exhibits in Cookery Section must be delivered to the stewards at the pavilion before 11am on Wednesday 18th October. No late entries accepted. 8. Collection of Preserves/Cookery exhibits from pavilion: The pavilion will open from 9am to 11am on Sunday 22nd October for the collection of the exhibits. Any exhibits not collected on the Sunday may be collected the next week during office hours from the Lismore Showground Office, Alexandra Parade, North Lismore. 9. 12 Fondant Icing only Entry fee: Free 1st & 2 nd prize receive ribbons. No entry accepted if more than 6 months old. Hand work only. No cake will be cut. Dummy bases may be used. Small vase and manufactured pillars may be used on wedding cakes. Tulle, ribbon, wire and stamens are permitted. Natural dried, fine stems may be used with restraint with floral sprays. Glue must not be used on sugar work in any class. Edible foods, e.g. sugar, coconut etc. may be used as part of the presentation. Cleats must be attached to all base boards. A tiered cake is one or two or more levels (not necessarily above one another) linked by a common base. Board size is limited to 40cm on the display side. Please notify office by Friday 13th October if not bringing entry for judging. INGREDIENTS 250g (8oz) sultanas 250g (8oz) chopped raisins 250g (8oz) currants 125g (4oz) chopped mixed peel 90g (3oz) chopped red glace cherries 90g (3oz) chopped blanched almonds 1/3 cup sherry or brandy 250g (8oz) plain Flour 60g (2oz) Self Raising Flour ½ teaspoon ground ginger 1/2 teaspoon ground cloves 250 g (8oz) butter 250 g (8 oz) soft brown sugar ½ teaspoon lemon essence or finely grated lemon rind ½ teaspoon almond essence ½ teaspoon vanilla essence ¼ teaspoon grated nutmeg 4 large eggs METHOD Mix together all fruits and nuts and sprinkle with sherry or brandy. Cover and leave at least 1 hour, but preferably overnight. Sift together the flours and spices. Cream together the butter and sugar with the essences. Add the eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures, mix thoroughly. The mixture should be stiff enough to support a wooden spoon. Place the mixture into a prepared tin, no larger than 20cm (8") and bake in a slow oven for approximately 3 1/2 to 4 hours. Allow the cake to cool in the tin. NOTE To ensure uniformity and depending upon the size, it is suggested the raisins be snipped into 2 or 3 pieces, cherries into 4 to 6 pieces and almonds crosswise into 3 or 4 pieces. As artworks are hung from the D rings, any hanging wire must be loose enough to allow access to the D rings. No screw eyes accepted. 5 All works must be dry and not exceed 100 cms in either direction including the frame. 6 Artworks without suitable safe hanging apparatus, unsuitably framed or oversized will not be exhibited. 7 The back of each artwork MUST show the following: Section, Title of Artwork, Price, Name of Artist, Address and Phone Number. 18

19 8 All artworks are to be displayed for the duration of the exhibition. If too many entries are received, selection for hanging in the Gem Club Pavilion will be decided by the Committee. Excess entries may be displayed elsewhere if space permits. All artworks that meet the Conditions of Entry will be judged and every effort made to exhibit all entries. The Committee reserves the right to withhold any entry which it considers unsuitable in any manner or does not meet the Conditions of Entry. Entry fees are non-refundable. The Committee reserves the right to cancel any section if there are less than five (5) entries. The individual artwork will be allocated to the next appropriate section. 9 Artworks will be released between 9am and 11am on Sunday 22 October no works released on Saturday.
