10 Melt n Mix Shortbread 250 g butter 1/3 cup icing sugar 1/3 cup cornflour 1/4 cup sugar 1/2 teas vanilla 2 1/3 cups plain flour Melt butter over low heat, allow to cool slightly. Sift icing sugar & cornflour into bowl, add sugar. Add butter & vanilla, beat mixture until thick & creamy. Add sifted flour, mix well. Press mixture into an 18cm x 28cm lamington tin, smooth over with a spatula & mark into fingers with a sharp knife. Each finger to be approx 3 1/2cm x 6cm & 1cm thick. Prick each finger decoratively with a fork. Bake in mod oven 30 minutes until light gold. Cut fingers while still warm. Jam Muffins 1 1/2 cups plain flour 2 teas baking powder 1/4 cup melted butter or margarine 1/4 cup castor sugar 1 egg 1/2 teas vanilla essence Pinch salt 1/2 cup milk Jam Mix dry ingredients, then add the rest except the jam. Do not over beat. Half fill greased muffin tins, place 1/2 teaspoon jam in the centre of each muffin, then top with remaining mixture. Bake at 200deg C for 12 to 15 minutes or until well risen & golden. Honey Tea loaf 2/3 cup cold tea 4 tables honey 1 tables water 2 cups mixed fruit 1 egg, beaten 250g SR flour Honey for glazing Combine the first 3 ingredients, pour over fruit & soak overnight. Add beaten egg to fruit mixture, beat well. Add sifted flour, mix well. Poor into greased & lined loaf tin (14cm x 22cm) & bake in mod oven 180deg C for 1 hour or until cooked. Cool in tin for 10 minutes, then remove. Brush top of loaf with honey. Store in air tight tin for a few days to improve flavour. Cheddar Cheese Biscuits 250g Chilled butter, chopped 1 teas Dijon mustard 2 cups plain flour 1 1/4 cups coarsely grated cheese Pre heat oven to180deg C. grease 2 baking trays. Using an electric beater, beat butter & mustard until pale & creamy. Stir in flour & cheese. Turn onto a lightly floured surface & using your hands, bring the dough together. Divide into 2 equal portions. Roll out 1 portion onto lightly floured surface till about 5mm thick. Use a round 5 1/2 cm cutter to cut disks from the dough. Place on greased trays. Place in fridge for 10 mins to chill. Repeat this process with remaining dough & bake for 18 to 20 minutes until golden. Cool on trays for 5 minutes before transferring to wire rack. MAKES about 60 biscuits Cream Cake 1 cup of sugar 1 cup of cream 2 eggs 1 1/2 cups SR flour Lemon essence Beat cream & sugar together well. Add eggs one at a time, beating well after each addition. Add essence & lastly the flour. Bake in loaf tin in mod oven for 1/2 an hour or until cooked. Ice with plain icing. OUT OF DATE CREAM IS IDEAL FOR THIS RECIPE Farm Cakes 2 cups plain flour 2 teas baking powder Salt 1/2 teas nutmeg 1 cup sugar 2 tables butter 1 cup mixed fruit 1 egg (beat in cup & fill with milk) 1 tables golden syrup Lemon essence Rub butter into flour, salt & nutmeg, add sugar & fruit. Combine syrup with egg mixture & add to dry ingredients. Mix all well. Press out onto floured board about 4 cm thick. Cut into squares approx 6 cm square. When the whistle is blown, contestants knit for 10 minutes exactly.
