6 Information and Just for fun Make Your Plate as Colorful as You: Eat The REAL FOOD Rainbow! Have you ever wondered why fruits and vegetables are different colors? When your mom or dad tells you to eat your fruits and vegetables, do you ever wonder why they are so important? If so, you are not alone! Fruits and vegetables are such an important part of our diet, partly because of their different colors. Different color produce (another word for fruits and vegetables) is made of different micronutrients. Just like protein, fats, carbohydrates and water, micronutrients are nutrients that our body needs to work like it is supposed to. Vitamins and minerals are micronutrients that we can consume in great amounts when we eat fruits and vegetables. The vitamins and minerals found in different fruits and vegetables play an important role in keeping us healthy by supporting our immune system and helping us fight off disease. They can also help us have healthy eyes and skin! There are five different color groups of fruits and vegetables: red, green, yellow and orange, blue and purple, and white, colorless and brown. Each color group is typically rich in certain vitamins and minerals, which have specific functions. Micronutrients found in greens help our liver fight off potentially cancerous cells. Lycopene, found in red fruits and vegetables, is associated with heart health. Yellow and orange produce are rich in carotenes that support the immune system and promote eye health. Anthocyanin, found in blue and purple fruits and vegetables, is important for heart health; these are usually also rich in antioxidants, which help our body fight disease. White fruits and vegetables have antibacterial and antifungal abilities that can help our immune system fight of infections. So eat a rainbow of color for and set an example for a healthy lifestyle!
