Our s Favourite Recipes Raw Cacao and Raspberry Scones By Eric Lanlard INGREDIENTS 225g (8oz) self-raising flour, plus extra for dusting ¼ tsp salt 25g (1oz) golden caster sugar 50g (1 ¾ oz) unsalted

METHOD Preheat the oven to 200 C (fan 80 C)/400 F/gas mark 6. Line a baking sheet with baking paper. Sift the flour into a mixing bowl, then stir in the salt and sugar.

5 Our s Favourite Recipes Raw Cacao and Raspberry Scones By Eric Lanlard INGREDIENTS 225g (8oz) self-raising flour, plus extra for dusting ¼ tsp salt 25g (1oz) golden caster sugar 50g (1 ¾ oz) unsalted butter, diced ml (4 5fl oz) buttermilk 4 tbsp milk 10g (¼ oz) freeze-dried raspberry pieces 20g (¾ oz) cacao nibs Beaten egg, to glaze Prep time: 15 mins Cooking time: mins Serves: 16 METHOD Preheat the oven to 200 C (fan 80 C)/400 F/gas mark 6. Line a baking sheet with baking paper. Sift the flour into a mixing bowl, then stir in the salt and sugar. Add the butter and rub in using your fingertips until the mixture resembles breadcrumbs. Mix the buttermilk and milk together in a jug. Pour the buttermilk into the bowl, a little at a time, and gently mix together. Before the dough has completely come together, add the raspberries and cacao nibs and combine to form a smooth, but slightly sticky dough. Do not overmix. Koshari Soup By Mohammad Orfali INGREDIENTS 80g olive oil 2 large onions, cut into cubes 2 cups green lentil 2 liters vegetable stock 3 tablespoons tomato paste 100g macaroni pasta Salt and black pepper 1 cup flat-leaf parsley leaves 1 cup thinly sliced green onions green parts 1 cup cooked chickpeas FOR ASSEMBLING 1 cup sautéed baby spinach leaves 150g sour cream to finish Fried onion for garnish METHOD Sweat the onions with olive oil over medium heat and cook for 15 minutes. Add the lentils and vegetable stock and simmer for about 35 minutes. Add the tomato paste and macaroni and cook for about 10 minutes. Add the cooked chickpeas, parsley and green onions and cook for 1 minute. Serve the soup with sautéed spinach, sour cream, crispy fried onion and spring onions.
