CARF CELEBRATION WEEK On November 25 th 26 th & 27 th Belvedere celebrated our 2 nd year as an accredited member of CARF. Belvedere received accreditation status in 2013 and we will be applying again in CARF provides Belvedere a framework for a person centered home a place where residents want to live, personnel want to work and both choose to stay. Our celebration consisted of flyers handed out to residents, staff and families, a display placed in the main foyer concerning all that CARF means to Belvedere residents and staff; free CARF cookies, tea and coffee for staff and a CARF Recipe for

4 # Excellence cooking contest. All departments were asked to submit their best tried and true excellent recipes. We had a very good response and we were able to put together a recipe book with the entries. The staff made their recipes and submitted them on the 27 th for judging. This was a tough job The winners were: APPETIZERS -1 st Teri Salt; 2 nd Lori Neall; 3 rd Mary Brear; 3 rd Cindi Mullen. MAIN COURSE-1 st Shannon Konoval; 2 nd Mary Brear; 3 rd -Cindi Mullen DESSERTS 1 st Sherry Quinn; 2 nd Paula LaFrance; 3 rd Rebecca McEwen (RAI) Thank you to all of the entrants for your great effort, delicious recipes and delightful presentations. Brown the beef in a skillet. Drain the grease and stir in the onions, garlic and spices. Cook on medium/low heat until the onions soften and become transparent. 2. Remove from heat. 3. Stir in the remaining ingredients and dump into a large casserole dish or deep 13x9 lasagna pan. Cover with aluminum foil. 4. Bake in a 350F preheated oven for 90 minutes. Halfway through the cooking time, take the casserole out of the oven and give it a stir. Calories: 300 Fat: 13.8 g Protein: 15.6 g Cholesterol: 47.8 mg Notes: If you prefer to have the cabbage soft and the rice very tender, similar to cabbage rolls, add another ¼ cup of water after the 90 minutes and cook for another 30 minutes. Tried & Tested Recipe Cabbage Roll Casserole Prep time: 30 mins; Cook time: 2 hour Total time: 2 ½ hours.
