I had originally written another version of this letter from the President, but I had to do a rewrite after the returns from Ohio and Virginia came in..so here it goes. Those of you that know me well know how I felt about the United States Presidential Election this year. Let me just say that I hope the next 4 years show us the era of transparency, reaching across the aisle, and economic growth that were promised in the last 4 years. Many of our interests as a sport fishing community are greatly affected by what goes on in DC, but more importantly we, as Americans, live in volatile times and we are putting our faith in our leaders to bring us through them unscathed. I look forward to seeing how a second term of President Obama turns out, and may God continue to bless the United States of America. Ok, now that I got that off of my chest, on to business. There are several big items that need to be addressed this month. The first item is the election of Directors and Officers for the club for Vice President Radcliffe is running unopposed, so it looks like I am stuck with that cantankerous, bald headed, loud mouthed son of a gun for another term.. and since I am not up for re-election until next year, he is probably saying the same thing! All kidding aside, Mark is a good friend of mine and I look forward to having him as my tag team partner for another year. That leaves the election choices for treasurer and directors. In keeping with club tradition I will not endorse any one candidate for any position. I know every one of the nominees for the Board positions, and honestly, there is not a bad choice on the list. I have enjoyed working with Brian Tinkler as treasurer, and while I do not know him well, I have talked with Brian Roberts and he is ready and willing to work for the good of the club. I encourage the membership to read the candidates bios, talk to them if possible, and then vote. The next big item, which those of you that attended the general membership meeting are already aware of, is a $50 increase in dues this year. The Board did not come to this decision lightly. While the club is on very stable financial ground (the best I have seen it since I became a Director in 1999), we need to be mindful of the future. This $50 increase will not go into the general fund, it will go into a reserve account that is earmarked for the future upkeep/ repairs/renovations that the clubhouse will need. Our building is not brand new anymore, and between Mother Nature and our membership, we are pretty hard on it! Another change that will be going into effect after January 1, 2013 is that all new members will be paying a one time $350 initiation fee in addition to their regular dues upon being accepted into the club. This initiation fee will also be put into the reserve account. By establishing this reserve, the Board is planning ahead so that future Officers and Directors will have the means available to maintain the clubhouse in the manner which the membership deserves Continued on next page.
2 A Message from the President (continued) During this shoulder season and over the winter months there will also be some changes to the club house. First off we are renovating/refurbishing the kitchens. Mike Diffendal has spearheaded this project and is working closely with Chef Mikey J. to bring it to fruition. As the planning looks now, the job should be mostly complete by the early part of December. The other off season project (also being overseen by Mike Diffendal) will be a revamping of our HVAC systems. We have met with HVAC engineers and we have plans for getting the club properly cooled and heated. Upon completion, both of these projects will greatly enhance the clubhouse experience for our members. Just a few weeks ago we held our 3 rd Annual White Marlin Party and our Annual Seasonal Awards Dinner. It was an incredible weekend. The White Marlin Party surpassed all expectations (gummy fish, give-a-ways, off-shore fishing s first ever Ultimate Fighting demonstration on the deck striker vs. submission artist, traveling ice sculptures ) And of course the Seasonal Awards, where the best of the best get recognized. Truly one of my favorite weekends of the year. As those of you that frequent the clubhouse have undoubtedly noticed, Shirley is no longer with us. Ms. Hopkins left her position at the club at the end of October. I have known Shirley for the better part of 20 years, and she was with the club for the past 6 years. She brought a taste of Southern Charm and Class to the club, and will be missed by all. Rick, Mikey J., and I will be working hard to find Shirley s replacement, and I wish Ms. Hopkins nothing but the best in her future endeavors. I look forward to seeing everyone at the Christmas and NYE parties next month, or at the Clubhouse before then. Till next time GO RAVENS!!!! 10 MONTHLY RECIPE Chicken Fried Steak INGREDIENTS: 2 lbs. beef bottom round, trimmed of excess fat 2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 1 cup all-purpose flour 3 whole eggs, beaten 1/4 cup vegetable broth 2 cups chicken broth 1/2 cup whole milk 1/2 teaspoon fresh thyme leaves DIRECTIONS: Preheat the oven to 250 degrees Fahrenheit. Cut the meat with the grain into 1/2-inch slices. Season each piece on both sides with the salt and pepper. Place the flour into a pie pan. Place the eggs into a separate pie pan. Dredge the meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Once tenderized, dredge the meat again in the flour, followed by the egg and finally the flour again. Repeat with all the pieces of meat. Place the meat onto a plate and allow to sit for 10 to 15 minutes before cooking. Place enough of the vegetable oil to cover the bottom of a 12-inch slope-sided skillet and set over medium-high heat. Once the oil begins to shimmer, add the meat in batches, being careful not to overcrowd the pan. Cook each piece on both sides until golden brown, approximately 4 minutes per side. Remove the steaks to a wire rack set in a half sheet pan and place into the oven. Repeat until all of the meat is browned. Add the remaining vegetable oil, or at least 1 tablespoon, to the pan. Whisk in 3 tablespoons of the flour left over from the dredging. Add the chicken broth and deglaze the pan. Whisk until the gravy comes to a boil and begins to thicken. Add the milk and thyme and whisk until the gravy coats the back of a spoon, approximately 5 to 10 minutes. Season to taste, with more salt and pepper, if needed. Serve the gravy over the steaks. Level: Intermediate Prep Time: 45 minutes Inactive Prep Time: 10 minutes Cook Time: 30 minutes Yield: Serves four to six.
