2 Message from the President Clay Meininger, TCC President & COO Spring is here! The trees are budding, the grass is starting to green and we re gearing up for another great season to enjoy the outdoors here at TCC! Whether you re on the golf course, playing tennis on our outdoor courts or enjoying a meal and drinks on the terrace patio, spring is definitely a time to celebrate the warmer weather to come! This past month, we hosted a Silver Oak Wine Dinner; 50 members and their guests joined us for the evening. The night was a huge success! Everyone I spoke with loved the wine and specially paired 5-course menu. Silver Oak/Twomey Wine Cellars sent out a representative to join us for the dinner. Tiffany Frazier, Southwest Regional Sales Manager, was a delight and gave insight on the winery. Thank you to all who attended! Save the date for August 2, where we will be bringing you another special wine dinner - more to come in future newsletters. Please be sure to join us on either Wednesday, April 20 or Thursday, April 21 for TCC s Renovation and Expansion Town Hall Meetings starting at 5:30 p.m. each evening. This will be a great opportunity to hear about the project, see drawings from the architectural design team and participate in a Q & A session. Message from the Chef Shawn Hartwig, Executive Chef Spring has sprung! The green has returned to our course and I have wonderful fresh ingredients to play with in the kitchen. I ve always been told that you shouldn t play with your food, but if you have met me, you can understand why I never listened to that. So Let the Fun of spring begin. Have you ever tasted White Asparagus? No? Well you can this month. I have three different ways to dazzle your taste buds. White Asparagus is big deal in France, they actively have festivals all over the Strasbourg region. You grow White Asparagus the same as the green, but you never let it see the light of day. It takes longer to grow because of this, but the end result is a sweeter, milder and almost nutty taste. We ll be featuring it in an appetizer that is a trio where you can try it Grilled, Pickled and Baked en Croute. We ll have it in a Sandwich with some Fresh Red Grouper that we ll grill, then top it with a local Tomatoes, Romaine, White Asparagus and Parmesan Relish on Wheat Toast. And finally an entrée, with Blackened Grouper, sautéed White Asparagus, Smoked Tomato, Goat Cheese Cream with Rice Pilaf. Please come out and try this special ingredient in our April Limited Edition Specials. On Friday, April 15, we ll have a Tour of Kentucky, where we ll show off some of my favorites from the region. The 1926 Hot Brown...this famous Sandwich was invented at the Brown Hotel in 1926 and is still served there today. We ll save the trip to Louisville- stop by and I ll have our version for you with Roasted Turkey, Bacon and Mornay Sauce all cooked together until golden brown placed on top of White Toast with fresh local Tomatoes. Or you can always try Mutton BBQ, a local favorite, smoked till fork tender with Mac n Cheese, Baked Beans and Slaw. If that won t do, then just come in for some Bourbon Spiked Bread Pudding with Carmel and Golden Raisins. If you can t figure out what to do for your office for Administrative Professionals Day on April 27, I ll take care of it. Just come in for our lunch buffet where I promise something for everybody. We ll have Chicken Cordon Bleu, Shrimp Alfredo, Stuffed Mushrooms, Create Your Salad, Twice Baked Potatoes, Grilled Asparagus, White Chocolate Mousse Cake and Fresh Strawberry Pie; like I said, something for everybody. Over the last couple of weeks I ve changed something for the better, we now use Capo Farms Chicken. This is the best chicken I ve ever had. It s free range, organic, and is local from north of Kansas City. Hope we have a another great Spring, please come out and say Hi! 2 Me, Tiffany Frazier and Chef Shawn. We were fortunate enough to have Tiffany Frazier with Silver Oak/Twomey Wine Cellars be present for our popular Silver Oak Wine Dinner this past month.

NEW FORMAT FOR 2016 MEN S LEAGUE Men s league will take place on Wednesdays in April on the following dates 6, 13, and 20 starting at 5:45 p.m. and will continue until the end of September ADULT GOLF CLINICS Adult Golf Clinics will run from 5:00-6:00 p.m. on select Thursdays throughout the summer and will consist of teaching and drills provided by one or more of the golf professionals. Course play may be implemented to give participants insight on golf course management and situations. Please call the Golf Shop to register for the following clinic dates in April 7 and 28. Cost for each clinic is $ JUNIOR GOLF CLINICS Junior Golf Clinics will run from 2:00-3:00pm on selected Saturday s throughout the summer and will consist of basic golf fundamentals provided by one or more of the golf professionals. Cost for each clinic is $ JUNIOR GOLF PROGRAMS We hope golf is the first activity scheduled for your children and grandchildren in Junior Golf kicks off on June 8, with clinic times by assigned age groups. Price per child is $150. Ages 5-9 from 8:00-8:50 a.m. Ages from 9:00-9:50 a.m. Ages 13+ from 10:00-10:50 a.m. Course Play will take place on Fridays throughout June & July. 5 Tennis News Junior Brown, Director of Tennis An important element to a powerful serve is a smooth motion and a good toss! You can t have a good serve without having a good toss. Here s a quick tip to help you improve your toss! Imagine yourself in your serve stance; now visualize a gigantic clock face right in front of you. The 12 on the clock is right in front of you. When you toss the ball it should line up with either the 1 or 2 on the clock if you are right handed or 11 or 10 if you are left handed. In doing this, you are giving yourself the best chance to have not only a consistent toss but also a smooth and consistent service motion! See you on the courts! Christian Osborn and Jesus Ramirez get a little extra volley practice in over Spring Break! FREE FOR ALL Saturday, April 16 from 1:00-2:00 p.m. Join us for the FREE FOR ALL. News Kent Morgison, Superintendent As things appear currently, your golf course at Topeka Country Club looks as if it came through another BRUTAL Kansas winter (your sarcasm alarm should be sounding) in fine shape and the golf season is upon us. Honestly, I cannot recall a more seasonable winter and it makes me a bit apprehensive about the upcoming months as to what our weather will bring. I try to never worry about things that are out of my control, so we will just enjoy it for now and be thankful for the wonderful stretch of weather we have had. Your maintenance staff has been busy getting things in order and prepared for the season. While early March was quite warm, it was also very dry so the need to irrigate arrived earlier than we hoped. Also, the warm winter has accelerated things and typical applications of chemicals and fertilizers have been moved up a touch. The zoysia fairways and tees are greening up earlier than normal and they have already received their first mowing of the season. As you can see in the picture, Steve Sidebottom and Tom Bradford have been busy in the greenhouse growing some great looking ornamentals that will soon be decorating the landscape at your club. Their hard work and knowledge in this area is a great asset that adds a beautiful backdrop to your relaxing round of golf. We thank both of them for their dedication to this important task and your Club. That is all for now! Your maintenance staff is excited to provide you with another great season of golf here at TCC.
