3 Summer Camps 2016 GOLF, TENNIS & SWIM (GTS) GTS Camp is Bentwood s most popular camp! This is a fun and exciting camp for beginner to intermediate level golf and tennis players from the ages of 5 to 12 years old. Participants can expect to learn basic skills in tennis and golf from our professional staff in the first two and a half hours, then finish up at the pool with lunch, which is included in the camp cost, and a non-instructional fun swim for the last hour. When: Tuesdays through Fridays, 9:00am-1:00pm Session II: July 19-22, III: August 2-5 Cost: $120mem/$140non per session LITTLE LOBBERS CAMP Designed for the beginner to intermediate-level junior tennis players ages 5-7 years old. Participants can expect to learn basic stroke mechanics, coordination skills, scoring and some rally play. This camp teaches the FUNdamentals while keeping the kids entertained with fun and games. The kids groups and curriculum will be based on age and ability. When: Tuesdays-Fridays only, 9:00-11:00am July July Cost: $75/mem, $90/non per session ROCK & RALLY CAMP Ages 8-13 & new tourney players/middle school Formerly Jr. Competition Camp, this camp will be a smash & a splash for our elementary-age and middle school kids who have the desire to become tournament players. This 3 hour camp will be a more intensive workout than the Little Lobbers by providing the technical drills, situational and match play necessary to teach kids how to be competitive players who can rally and play. The last 30min. of camp will consist of field games or swimming to incorporate a fun fitness element. When: Tuesdays-Fridays only, 9:00-12:00 July July Cost: $110/mem, $130/non per session PREP ACADEMY (Ages 9-13, Challenger to Champ Level tournament players) This camp is structured around weekly concepts to prepare each player for life lessons and their tennis game through fun, drills & match play. Throughout the summer we will learn how lead by example, communicate and be respectful to our fellow tennis players and the game of tennis. In the modern game, you can t be competitive without fitness so we have certified trainers from WTSWI do tennis specific conditioning daily. 5 Court Construction! Make your Reservations! We have started construction to post-tension overlay to Courts 2,3,4 & 5 so we will no longer have cracks. The project entails taking fencing down, forming, laying rebar, and pouring a 5" concrete cap over the existing surface. After a 28-day curing period the courts will be surfaced, lines painted and fences raised 5". Total time will be approximately 60 days. After completion of Cts.2-5, we will post-tension cap Courts 9 & 10 and simply resurface courts 7 & 8. This will take another 60 days so by the end of the year, we will have 6 new courts, plus 2 resurfaced, making Bentwood a premier tennis facility! During this time we will be down to eight courts so please, make your reservations. If you are interested in being a Bentwood Tennis Events sponsor for our upcoming Fantastic Finale and Slamfest please contact Courtney. Proceeds benefit the New Bridge Family Shelter and Bentwood Courts Fund to help with this project. Congratulations to our Fantastic Finale Pickleball Team Winners. We played a new team format that proved to be a nail biter! Winning team: Cat Taylor, Dena Martin, Jan Wakefield, Johnny Coats, Lana Mott, Patti Wood, Susan Jackson, Zack Johnson. Bentwood Pickleball Ladies represented in Ruidoso, NM in their USAPA sanctioned tournament. Margaret Porter & Kelly Driver as well as Donna Hocker & Cathy Choate won gold in their respective divisions. Gail Stillwell & Kate Murray took bronze. Pickleball COURT RESERVATIONS Due to high demand for courts, reservations can be made for 1 hour at time, excluding club leagues and events. Reservations Recommended, Additional prizes each week for our reserved guests! Easy Carnitas with Beer & Pepper Jelly Carnitas are an easy way to serve a crowd. A traditional two-part cooking process (braising and then browning the pork) results in an incredibly tender texture and rich, meaty flavor. In this recipe, the pork is cooked in beer and then the shredded meat is tossed in a spicy sweet pepper jelly. Serve in hot corn tortillas topped with shredded cabbage and a squeeze of lime. Ingredients: 2 1/2 pound boneless pork shoulder, cut into 2-inch cubes, 2 (12-ounce) bottles lager, 1 onion, chopped, 3 cloves garlic, crushed, 1 cinnamon stick, Zest of 1 orange, removed in wide strips with a vegetable peeler, 3 fresh bay leaves, 1 1/2 teaspoon coarse sea salt, 3 tablespoons pepper jelly. Method: Combine pork, beer, onion, garlic, cinnamon stick, orange zest, bay leaves and salt in a large deep skillet or Dutch oven. Liquid should just barely cover meat (it doesn t need to be completely submerged); add water if necessary. Bring to a boil, then reduce heat and simmer, stirring occasionally, until all liquid has evaporated, 1 1/2 to 2 hours. Sear meat in the dry skillet, turning occasionally, until browned and crispy on the edges, about 5 minutes. Remove from heat. When meat is cool enough to handle, remove cinnamon stick, orange zest and bay leaves and discard. Use a fork to shred meat. Stir in pepper jelly until combined. Pepper Jelly Ingredients 2 1/2 cups finely chopped red bell peppers, 1 1/4 cups finely chopped green bell peppers, 1/4 cup finely chopped jalapeno peppers, 1 cup apple cider vinegar, 1 (1.75 ounce) package powdered pectin, 5 cups white sugar Directions: Sterilize 6 (8 ounce) canning jars and lids according to manufacturer's instructions. Heat water in a hot water canner. Place red bell peppers, green bell peppers, and jalapeno peppers in a large saucepan over high heat. Mix in vinegar and fruit pectin. Stirring constantly, bring mixture to a full rolling boil. Quickly stir in sugar. Return to full rolling boil, and boil exactly 1 minute, stirring constantly. Remove from heat, and skim off any foam. Quickly ladle jelly into sterile jars, filling to within 1/4 inch of the tops. Cover with flat lids, and screw on bands tightly. Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 5 minutes.
