All gas perated Bakers Pride charbrilers are intended fr use with the type f gas specified n the rating plate and fr installatin will be in accrdance with Natinal Fuel Gas Cde ANSI Z223.1 (latest editin). INSTALLATION INSTRUCTIONS Installatin Instructins (A) INSTALLATION f this briler must cnfrm with the latest editin f Natinal Fuel Gas Cde and/r lcal cdes, (the American Natinal Standard in USA and CAN/CGA-B149.1 r 2 Installatin Cde in Canada). In Eurpe, this appliance must be installed in cnfrmity with current regulatins and used nly in a well ventilated space. (B) In MASSACHUSETTS, All gas prducts must be installed by a Massachusetts licensed plumber r gas fitter. Ventilatin hds must be installed in accrdance with NFPA-96, current editin, with interlcks as described in that standard. 1

4 INSTALLATION INSTRUCTIONS Acceptable Clearances: (A) USA and Canada. Due t intense heat generated by radiatin, in USA and Canada these brilers shuld be installed in nn-cmbustible lcatins nly, including the areas abve the grate level. Each regulatr is adjusted t yield a manifld pressure f 3.5 water clumn (9 mbar) fr natural gas r 10 water clumn (25 m bar) fr prpane gas. Units fr prpane gas are available fr use in USA and Canada nly. Recmmended minimum gas supply lines are listed belw: All XXE Mdels: 3/4 (19 mm ) NOTICE A shut-ff valve in a readily accessible lcatin must be munted n the gas supply line befre the unit. Fr units using prpane gas supply In USA and Canada lines less than 1/2 (12.7 mm) inside diameter shuld nt be used. On the XXE series, the gas cnnectin is lcated n the right rear f the unit. CAUTION Be sure t cap whichever side is nt cnnected. When making gas pipe cnnectins, pipe jint cmpund resistant t the actin f liquefied petrleum gases shuld be used. The briler and its individual shutff valve must be discnnected frm the gas supply piping system during any pressure testing f that system at test pressure in excess f 1/2 psig (3.45 kpa). The briler must be islated frm the gas supply piping system by clsing its individual manual shutff valve during any pressure testing f the gas supply piping system at test pressures equal t r less than 1/2 psig (3.45 kpa). Burners Check t see that air mixer caps n the frnt f all burners are adjusted and tightened, allwing half the pening t shw. T install the burners: (A) Place the frnt venturi end f the burner int the valve assembly by fitting the center hle f the air mixer cap ver the brass rifice. (B) Drp the tw ends f the burners ver the burner supprt pins in the frnt and back f the chamber. Radiants Munt the A shaped radiants ver the burners with each end munted n special supprts n the frnt and rear f the chamber. A radiant shuld be munted ver eachburner assembly. Tp Grates Place a grate ver each f the radiants. Fr nrmal peratin the pinted side f the grate is facing up. Fr use with fds that require extra, supprt, the flat side may be used. On XXE mdels, grates can be placed n three levels; tw psitins are built int the rear f the unit; the third psitin requires a special adapter which is supplied with the unit. The adapter cvers nly half f the briler. T cver the entire unit, ptinal adapters can be rdered. 2

5 INSTALLATION INSTRUCTIONS Lighting: Each burner has a standing pilt burner which must be lit befre the burners can be lit. T light the pilt burners: (A) Turn all briler valves t ff psitin (B) Open main gas shut ff valve ( prvided by custmer). (C) Press, turn cunterclckwise and hld the burner cntrl knb t the pilt burner ignitin psitin. (D) Using a lit taper, light the pilt burner. (E) Release the knb after 30 secnds. Pilt burner shuld stay lit. If the pilt burner des nt remain lit, wait fr 5 minutes and repeat steps C and D. Hld the knb pressed lnger befre releasing. (F) With a screwdriver adjust the pilt burner flame t abut 1/2 (12.7 mm). Turn the adjusting screw clckwise t reduce r cunterclckwise t increase the pilt burner flame. (G) Each burner may nw be adjusted t the desired flame size by turning the individual burner valve knb. (H) Turn the knb t the pilt burner ignitin psitin t shut dwn the main burner. (I) Turn the knb t ff psitin t shut dwn the pilt burners. NOTICE Wait five minutes befre attempting t relight the pilt burners. Grease Pan A grease pan is prvided belw the burners t hld any grease that drips dwn past the radiants while briling. An additinal grease drawer is prvided in the frnt right crner f the grease pan t cllect the grease frm the grease drain in the frnt which in turn drains int the grease cllectr. Water is usually added t the grease pan t reduce flareup and flash back. The grease drip will extinguish as it hits the water. Griddle Plate (Optinal) Griddle plates shuld nt cver mre than 50% f the BROILING area. Each Griddle Plate fits n tp f tw grates. It is nt necessary t remve the tp grates and radiants befre installing the griddle plate. Additinal Installatin Instructins (A) Keep the area arund the briler free and clear f cmbustible materials. (B) The prvisin f an adequate air supply t yur briler is essential. Prvide fr sufficient utside air t enter the briling area and assure that this air flw is nt bstructed. (C) Air enters the burner area frm the frnt f yur briler. Assure that this area is kept pen and unbstructed. (D) Servicing is accmplished thrugh the frnt and tp f the briler. Assure that this area is kept unbstructed fr prper servicing and peratin. Installatin With Casters (A) Install the casters with wheel brakes n the frnt f the appliance. (B) Installatin shuld be made with a cnnectr that cmplies with the latest editin f the Standard fr Cnnectrs fr Mvable Gas Appliances (ANS/ Z21.69 in USA, CAN/CGA-6.16 in Canada) and a quick discnnect device that cmplies with the latest editin f the Standard fr Quick Discnnect Devices fr use with gas fuel (ANSIZ21.41 in USA, CAN1-6.9 in Canada). Adequate means must be prvided t limit the mvement f the appliance withut depending n the cnnectr and any quick discnnect device r its assciated piping t limit the appliance mvement. (C) The restraint shuld be attached t the center f the back abut 1/2 (12.7mm ) frm the bttm. (D) If discnnectin f the restraint is necessary, the restraint shuld be recnnected after the appliance has been returned t its riginally installed psitin. 3

6 OPERATING INSTRUCTIONS Lighting Prcedures See Lighting Sectin under Installatin Instructins. Briling Briler tp grate must be ht enugh t make black char-marks when starting t bril. Adequate preheating time is necessary fr the fd t release frm the briler and t ck prperly. Allw the unit t preheat fr minutes befre briling. (A) D nt press the juice ut f the meat because that will cause dry prducts. (C) D nt use frks r ther sharp bjects t pke hles in the meat. D nt cut the meat as it cks. (D) Thick pieces f meat require a lnger briling time with less flare-up. Reduce flare up by trimming excess fat fr a lnger bril time withut burning. (E) Keep the unit clean. Fd caught between the grate will nt allw ht air t rise arund the prduct. This will result in uneven heating and increase the cking time. (B) After briling, allw the meat t sit cvered n a heated platter fr 2-5 minutes befre cutting. This will allw the juices t settle and the prduct will be mre mist. MAINTENANCE Service Shut ff the main gas supply befre attempting any maintenance n the unit. If required, cntact yur dealer, the factry, r a lcal service cmpany t btain qualified maintenance and repairs. Care And Cleaning (A) The tp grates shuld be cleaned using a stiff wire brush. If this is dne daily, the accumulatin f fd and fat caught in the grates and wrk necessary t keep them clean will be reduced. Peridically, they shuld be turned ver and brushed and then put back. In the event that an extra amunt f fat is accumulated n the tp, due t use f lw heat, we recmmend turning up the flame f this sectin fr abut an hur, which will burn ff much f the fat and residue and the brushing peratin will be easier. Under n circumstances shuld the grates be placed in a dishwasher. Sap, water, r any detergents shuld never be used n the cast irn grates. (C) Inner panels - These are made f aluminized steel. Use ht sapy water and sft nyln scrub pads t clean the surfaces. (D) Grease pan and grease cllectr - Grease pan and cllectr shuld be cleaned daily r mre ften if necessary. CAUTION (A) Clean the unit nly when it is cld. (B) Always rub with the grains when cleaning. (C) D nt use abrasive pads fr cleaning. (D) D nt use caustic cleaning cmpunds n aluminized surfaces. Cleaning Tls Several mdels f specially designed tp grate brushes and grease drain scrapers are available frm Bakers Pride. Cntact Bakers Pride fr mre infrmatin. (B) Frnt - Sample supplied with the unit r any reputable stainless steel cleaner can be used. 4

13 HEAVY DUTY GAS CHARBROILER OPERATION MANUAL BAKERS PRIDE LIMITED WARRANTY WHAT IS COVERED This warranty cvers defects in material and wrkmanship under nrmal use, and applies nly t the riginal purchaser prviding that: The equipment has nt been accidentally r intentinally damaged, altered r misused; The equipment is prperly installed, adjusted, perated and maintained in accrdance with Natinal and lcal cdes and in accrdance with the installatin instructin prvided with the prduct; The serial number rating plate affixed t the equipment has nt been defaced r remved. WHO IS COVERED This warranty is extended t the riginal purchaser and applies nly t equipment purchased fr use in the U.S.A. COVERAGE PERIOD Cyclne Cnvectin Ovens: BCO Mdels: One (1) Year limited parts and labr; (1) Year limited dr warranty. GDCO Mdels: Tw (2) Year limited parts and labr; (2) Year limited dr warranty. CO11 Mdels: Tw (2) Year limited parts and labr; (5) Year limited dr warranty. All Other Prducts: One (1) Year limited parts and labr. WARRANTY This warranty cvers n-site labr, parts and reasnable travel time and travel expenses f the authrized service COVERAGE EXCEPTIONS representative up t (100) miles, rund trip, and (2) hurs travel time. The purchaser, hwever, shall be respnsible fr all expenses related t travel, including time, mileage and shipping expenses n smaller cunter mdels that may be carried int a Factry Authrized Service Center, including the fllwing mdels: PX-14, PX-16, P18, P22S, P24S, PD-4, PDC, WS Series and BK-18. All remvable parts in Bakers Pride Charbrilers, including but nt limited t: Burners, Grates, Radiants, Stnes and Valves, are cvered fr a perid f SIX MONTHS. All Ceramic Baking Decks are cvered fr a perid f THREE MONTHS. The installatin f these replacement decks is the respnsibility f the purchaser. The extended Cyclne dr warranty years 3 thrugh 5 is a parts nly warranty and des nt include labr, travel, mileage r any ther charges. EXCLUSIONS Negligence r acts f Gd, Failures caused by erratic vltages r gas supplies, Thermstat calibratins after (30) days frm equipment installatin date, Unauthrized repair by anyne ther than a Bakers Pride Factry Authrized Service Center, Air and Gas adjustments, Damage in shipment, Light bulbs, Alteratin, misuse r imprper installatin, Glass drs and dr adjustments, Thermstats and safety valves with brken capillary tubes, Fuses, Char-briler wrk decks and cutting bards, Tightening f cnveyr chains, Adjustments t burner flames and cleaning f pilt burners, Tightening f screws r fasteners. Accessries spatulas, frks, steak turners, grate lifters, ven brushes, scrapers, peels. etc., Freight ther than nrmal UPS charges, Ordinary wear and tear. INSTALLATION Leveling and installatin f decks as well as prper installatin and check ut f all new equipment per apprpriate installatin and use materials is the respnsibility f the dealer r installer, nt the manufacturer. REPLACEMENT PARTS Bakers Pride genuine Factry OEM parts receive a (90) day materials warranty effective frm the date f installatin by a Bakers Pride Factry Authrized Service Center. This Warranty is in lieu f all ther warranties, expressed r implied, and all ther bligatins r liabilities n the manufacturer s part. Bakers Pride shall in n event be liable fr any special, indirect r cnsequential damages, r in any event fr damages in excess f the purchase price f the unit.
