2 CONCESSION RULES: Cncessin pens ½ hur befre and remains pen thrughut the entire event. Clean up must be dne at the end f the evening! Price lists are psted and must be fllwed n negtiating prices. Vlunteer Cncessin wrkers are nt eligible fr free fd. Site Manager is permitted t get drinks fr fficials and annuncers. The Ftball Chain Crew is permitted a ht dg and drink at half time frm the VISITING shed. All Cmp fd must be recrded s Rckets can be reimbursed frm the athletic dept. Cnsider crwd and time left in game befre making mre ht fd. N prfit in thrw aways lessens the amunt f earned mney ging t all teams! NOTE: Plugging in 2 items int an electrical utlet will prbably blw the fuse/utlet. Reset at the utlet and/r at the fuse bx. If yu feel yu are blwing a lt f fuses, yu can unplug the Drink Cler. Drinks will stay cl fr the evening. REMEMBER TO PLUG IT BACK IN at the end f the night.

3 RESPONSIBILITIES: Site Manager This is a Schl Emplyee may vary. THEY HAVE THE CASH BOX!!! Gets cash bxes each Stand s Manager. Exchanges cell phne numbers with each Stand s Manager. Orders extra pizza during the night when needed. (Dmines is ) If applicable lets Visitr Stand Manager knw hw many pizzas t be reserved fr refs at end f game. Cllects cash bx at the end f the night. Stand Manager Is a parent r cach f the team wrking that evening. Arrives at least 1 hur befre Stand pens. Stand must pen ½ hur befre scheduled event. HOMECOMING is 45 Minutes BEFORE GAME TIME! Respnsibilities: Picks up the Cash Bxes frm Site Manager and verifies pening cash. Takes inventry see sheet Des pst game inventry see inventry tab in this bk. Puts cmpleted sheet in cash bx at end f night Manages team vlunteers staffing befre the event and during the event. Makes sure team is mnitring ht fd levels. Helps team make items as needed. Makes sure stand is cleaned and cmpletely restcked. Ensures clean up list is dne & signs ff clsing sheet. Puts cmpleted sheet in cash bx at end f night. If applicable, ensures extra pizzas are reserved fr refs. (ask Site Manager) Cunts end f night cash, initials cash bx paper and turns it ver t the evening s Site Manager. Shift Wrkers Are team members, parents, r cach f the team wrking that evening. 8 peple fr Hme Stand At least 2 wrkers need t arrive 1 hur befre stand pens. Others need t arrive minutes befre stand pens. (Stand Manager may find it helpful t have an able bdied shift wrker arrive when they d t help mve drink cases) Respnsible fr: Fd prep and/r serving custmers. Assists clean up at end f the night. One wrker meets the pizza delivery persn at gate. (If bth Visitr and Hme Stands are pen, then the Visitr Stand sends the wrker and gets 2/3 f the pizzas t Hme Stand. Watch cheese/pepperni split!) 6:30, Main Gate. Already pre paid, n tipping needed) Rcket Runner ONLY cmes when BOTH Cncessin Stands are pen at the Stadium. (typically FOOTBALL FRIDAYS!) Arrives at least 1 hur 15 minutes befre HOME stand pens. Helps train the teams that are wrking fr the night Help team start cffee, ht dgs & ppcrn Starts up stand fr the night with the Stand Manager. Brings t Visitr Stand WHEN HOME STAND IS OPEN FOR THE EVENING: Ht Dgs (cked, wrapped in buns and fil, stred in raster) and weather permitting pre made Ht Chclate and Cffee Bth prblem slver Gets any additinal supplies needed during the night (change, papergds, etc.) Typical Start times fr Ftball: Freshman: Thursday 4:30pm, shed pens 4:00pm Junir Varsity: Saturday 10:00 am, shed pens 9:30am Varsity: Friday 7:00 pm, shed pens at 6:30 (Hmecming is earlier!!)

4 START UP: Mve all unrefrigerated sda, water, Pwerade ut f the way if nt already dne. In Hme stand mve it up frnt under custmer service windws and under Candy ledge. Take Inventry. Recrd n sheet. Cunt starting cash. Recrd n sheet. GET Ht Chclate filled IGLOO cler frm HOME STAND. Weather permitting, & nly if Hme Stand is pen. GET Cffee filled IGLOO Cler frm Hme Stand Weather permitting, & nly if Hme Stand is pen. Start making ppcrn. Ppcrn typically needs t be cntinuusly ppped thrughut the first half t keep up with demand. Half time hits ppcrn very hard! Ppper takes 2 packets f crn/il. Turn n all switches. Add Ppcrn/Oil. When ppping slws significantly, turn ff stirring arm and kettle heat switches. Dump ppcrn frm kettle. Repeat as needed. GET HOT DOGS frm HOME STAND. Only if Hme Stand is pen! (If it is nt ging t be pen, yur nly ht entrée is pizza ) These will cme t the Visitr Stand in empty raster. Plug in Raster next t Ppcrn Ppper Wipe cunters near sink and stve fr accumulated dust. Wipe tables. Wipe custmer service cunters. Put ut Cndiments: Ketchup, mustard, relish (if available and if serving ht dgs that night), creamer, sugar, stirrers. Put flding white table ut frnt t hld cndiments. Put ut candy. Stck Lllipp tree. Put ut a sample f each drink and flavr n tp f lwer cunter Check Pizza upn its arrival. If desired Assign Respnsibilities t Shift Wrkers. (like ppcrn maker)

5 NOTES: Visitr Stand: Suggest 4 peple needed t thrugh the 3 rd quarter. Culd cut back ne n 4 th quarter if slw night. HOT DOGS When available Think ahead fr when yu need t get mre! Initially it takes abut minutes t warm the water and ck the first batch f ht dgs. It takes time fr the Hme Stand t make them/get them t yu. Make sure yu are wearing fd service glves. PIZZA Keep all ther pizza in the prvided bxes/puches & stre in the warmest part f the stand. Place stack f paper plates near pizza. Wear fd service glves. Ask Site Manager if need t save pizza fr the refs fr the end f the night. Check pizza quantities. If very lw befre half time, discuss extra quantities t rder with Site Manager. It s nt an easy call t make between running ut early and having t much which decreases ur prfitability. Check with ther stand if pened t see if pizzas need t be redistributed. COFFEE When available Think ahead fr when yu need t get mre! It takes time fr the Hme Stand t make them/get them t yu. Remember they are making quantities fr bth stands! TYPICALLY WE SELL MORE HOT CHOCOLATE THAN COFFEE POPCORN KEEP POPPING cntinuusly until half time. Yu need t build up supply. As sn as yu hear the ppping slw t almst a stp, empty the ppper. Ppcrn burns quickly and will stink up the stand!!! FRONT SERVERS Cardbard carriers are available. Replenish as prduct sells dwn. Peridically check the cndiment area t wipe any messes.

6 CLEAN UP Shed Manager Signature after cmpletin: Restck cler with beverages. LOOK AROUND STAND! Pack ut the shelves that yu have stck fr!! D clsing inventry sheet. Place all cndiments (ketchup, mustard, relish, creamer packets, sugar packets) in cler. Place ALL CANDY in cler. Otherwise it attracts mice. Empty raster and wipe it ut. Return it t the Hme Stand s it can be refilled next time. VISITING BOOTH needs t bring their igls back t the Hme shed and clean them DO nt dump it n the Hme Stand Vlunteers. Wash them with at the Hme Stand with sapy water especially the spigts. The Igls shuld be left there fr refilling at the next event. Clean all utensils. Including the scissrs used fr ppcrn making. Wipe dwn Ppcrn Maker /Scp Wipe ALL cunters. Sweep Flr. Remember t d all areas! Place Trash utside Cncessin stand fr maintenance t pick up. MAKE SURE DRINK COOLER IS PLUGGED IN! Make sure all appliances (except the stve) are unplugged, turn ut lights, lck dr. STAND MANAGER: COUNT ALL MONEY and sign sheet. MUST be handed t Site Manager.
